Nova Scotia lobster belongs to the species Homarus americanus, which makes its home in the warm waters of the Atlantic, from the Labrador in Canada all the way to Cape Hatteras in North Carolina, though it is uncommon south of New Jersey. With members of the species measuring up to 64 cm and weighing in at over 20 kilograms at times, it is the heaviest and one of the longest crustaceans in the world. Because it is a crustacean, it was once considered food for the poor; today, lobster is the example of fine dining, and highly sought after for its great taste and texture.

Contrary to what would be expected, lobsters are not naturally red: their shell contains a mixture of pigments which gives them a green and brown color. When it is cooked, almost all the pigments get degraded by the heat, except for the one which makes the shell red, thus making the lobster a rich red color once it is ready to eat. However, in the wild, lobsters can come in a variety of fantastic colors such as bright blue, stark yellow, and even albino white!

The traditional way of cooking lobster is with a live boil: simply drop the lobster into a pot of boiling water head first and boil it until its shell becomes completely bright red. Then pluck it out of the water and serve it on a plate with lobster crackers, clarified butter and some mashed potatoes and steamed vegetables to enjoy on the side!

Scampi tails come from the Norway lobster, Nephrops norvegicus, the most important commercial crustacean in Europe. They are slim and orange-colored, measuring up to 20 cm in length usually: exceptional individuals reach about 25 cm! They live in semi-permanent burrows under the sand where they make their home during the day, coming out at night to catch food. These burrows mean that only parts of the sea floor are suitable for their habitation, with large areas of inhospitable terrain separating over 30 populations in the North-Eastern Atlantic. This also makes Norway lobster populations easier to manage and fish, since individual adults rarely travel more than a few hundred meters.

As the first meat and seafood company in Canada to provide online ordering services to families across the country, we get our fair share of questions from customers who are not too familiar with our concept or the process that’s needed to make all parts of it possible. Whether it is about the quality or provenance of our products, to the shipping process, to the green-ness of the online shopping process, we love to address these questions and spread the news about Gourmet Secrets to our customers. By far and large, however, the number one question we receive is this one:

Why is there a shipping cost, and why is it so expensive?

And this is a good question- it’s important to know where your money is going! There are a lot of misconceptions surrounding this particular question, however, and we want to make sure you’re armed with accurate information on how the shipping works at Gourmet Secrets. Here’s one of the myths and facts about Gourmet Secrets shipping.

Myth: Shipping is always expensive when ordering from Gourmet Secrets.

Fact: Yes, shipping can be expensive- when you order only a few items. Every package from Gourmet Secrets comes in a styrofoam container and with enough dry ice to last until it arrives to your door, no matter if it’s 2 items or 20 items. We do not get these things for free: their price must be included in the cost of an order if we are to be able to grow as a company to serve you better. Smaller orders also tend to need somewhat more dry ice than larger orders to keep frozen for the same amount of time, since the lone items will thaw more quickly than an item surrounded by other frozen things. A larger order will thus have a lower shipping price per item than a small order, and since you are ordering fewer times, you don’t pay for more than one trip for your food!

Myth #2: We don’t pay shipping on purchases from a physical store.

Fact: You don’t see it, but it’s there: shipping costs in physical stores are usually included in an item’s price, as well as the costs that come with a physical location such as heating, electricity and employee wages: collectively, they are called “overhead”. Unless you purchase directly from a manufacturing plant, there is always a shipping cost included in the price of any item you purchase at a store, as it had to travel from that plant to the retailer which now stocks your items. The overhead is a smaller portion of the price of larger stores due to the sheer quantity of items they purchase at one time, while in smaller butcher shops, the overhead can make a real difference in the price of the meat. Recipe: Three Seafood Tomato Bake

This recipe was inspired greatly by the one found here, though I omitted some ingredients and added others of my own. The end result is a similar recipe, reminiscent of Louisiana étoufée (though not made with a roux), with a blend of different flavor histories. It serves six to eight people comfortably! This seafood casserole will be bursting with hearty flavors as well as a cascade of textures: the prawns will be crisp and fresh, the scallops tender and flavorful, and the haddock flaky and juicy. The au-gratin style adds the sharp asiago and cheesy cheddar flavors that are sure to delight. Serve this atop of sautéed garlic potatoes, linguine or even brown rice, and a medley of steamed vegetables such as celery, carrots, broccoli and/or cauliflower!


  • 650 g / 1.5 lbs Gourmet Secrets Black Tiger Prawns
  • 650 g / 1.5 lbs Gourmet Secrets East Coast Giant Scallops
  • 4 x 4oz Gourmet Secrets Haddock Loins
  • 2 tablespoons jamaican jerk spices
  • 1/2 tablespoon salt
  • 2 cups tomato sauce (canned or homemade)
  • 1/2 bell pepper
  • 1 yellow onion (optional, if present in sauce)
  • 2 tablespoons chili sauce
  • 1 teaspoon cayenne pepper
  • 2 teaspoons thyme (optional if present in sauce)
  • 1 teaspoon oregano (optional if present in sauce)
  • black ground pepper
  • salt 
  • 1/2 cup asiago cheese, grated
  • 1/2 cup cheddar cheese, grated


  1. Preheat your oven to 325 degrees Fahrenheit. Heat up your tomato sauce in a pot until it bubbles, then lower to a simmer. Add in the cayenne pepper and chili sauce.
  2. Chop up your bell pepper and onion into bite-size pieces and toss in the frying pan with some oil or solid fat (butter, margarine, Earth Balance or whatever). Crack some black pepper on top, salt ‘em up, add your thyme and oregano, and sauté these bad boys until the onion becomes translucent. Transfer them into the tomato sauce pot and stir well.
  3. Keeping the heat on the sauce to a low simmer and stirring every now and then, prepare your seafood. Using a utility knife, chop up your scallops in half or quarters, then chop up your haddock in a checkered X pattern. Squeeze the tail ends off of the tiger prawns and either keep them whole or chop them up into smaller pieces. Throw all the seafood together into a deep, rectangular baking pan, top off with a copious amount of jamaican jerk spices, and mix together with your hands, ensuring the spices coat the seafood evenly.
  4. Once your seafood is mixed, pour the tomato sauce over the top and mix it again until it is evenly distributed. Coat with asiago cheese first, then layer the mozzarella and yellow cheddar on top. Place the pan in the oven and bake at 325 Fahrenheit for 20 minutes.

Shrimp- who doesn’t love them? Crisp, tender and oh so flavorful, they serve as a great appetizer when served cocktail-style, stir-fried in a Vietnamese recipe, or grilled on the barbecue with some salt, pepper and Old Bay!

In Canada and the United States, the words “shrimp” and “prawn” are often used interchangeably, and even marine biologists are not in agreement on what constitutes a shrimp or a prawn. The two most common species of shrimp that are traded worldwide are the whiteleg shrimp and the black tiger prawn. The black tiger prawn, Penaeus monodon, can grow to be one of the largest of all, and are renowned around the world for their exceptional taste and texture. Gourmet Secrets Black Tiger Prawns are farmed in a natural environment with flowing water circulation, no inorganic feed additives or hormones used, and no overcrowding: this results in a firmer, tastier shrimp that can grow to its full potential!

Louisiana Jumbo Cooked Shrimp are instantly recognizable with their bright red and white coloration. This indicates that they’ve already been cooked, so there’s no need for further preparation: just thaw and serve on ice with your favorite cocktail sauce and you’re ready to go! They can also be lightly sautéed in a skillet with butter and garlic and served atop rice and steamed veggies for a delicious seafood meal. They are affectionately called P&D, or peeled and de-veined: their shells have been removed and they are already prepared for you to eat!

Up next are our Jumbo Black Tiger Prawns. These are larger in size than our cooked shrimp, and their black-striped appearance indicates that they are raw: be sure to cook these before you serve them! Stir-fried with a teriyaki sauce and Asian veggies on top of Shanghai noodles, or battered and fried for a tasty popcorn shrimp appetizer, they make for a great treat for your friends and family!

Last, but certainly not least, we have our Colossal Black Tiger Prawns. These are 6/8 count, meaning that you only need 6 to 8 of them to equal one pound- that’s big enough to make your steak look like a side dish! These massive, flavorful shrimp are best prepared on the barbecue: baste them with garlic butter, top off with Old Bay and grill for 5 minutes on each side or until they are nice and red, ready to sink your teeth into! Some of our customers even split them along the back butterfly-style and stuff them with seasoned bread crumbs and cream cheese before tossing them on the grill, for a tasty twist on the traditional recipe!
